The Center for Culinary Arts (CCA, Manila), the Philippines’ first and foremost institution for culinary education, brings back Japanese Sushi Master, Chef Andy Matsuda, CEO and Chief Instructor of the Sushi Chef Institute in Torrance, California, USA, for a series of cooking classes to master the craft of making the perfect ramen and genuine bento cooking featuring the art of preparing sushi and katsu that is all the rage in Manila!2-Day Ramen class (3 hours per class)
“Ramen Noodles” continues to grow in popularity around the world! Learn Japanese style soup stock with tonkotsu (pork broth), shoyu (soy sauce), shio (salt), and miso (soy bean paste); plus popular ramen toppings such as charsiu (stewed pork), uniquely boiled seasoned egg and spicy rich oils. Learn to create your own flavorful ramen in your restaurant or home!

3-Day Class for Bento Box, Sushi & Tonkatsu (3 hours per class)
“Bento Box Meals” is a beautiful presentation of boxed meals filled with an array of ingredients including sushi and tonkatsu (deep fried pork). You will be introduced to bento boxes used at special occasions and what fills these boxes. Day 1 starts with Japanese grilling food such as teriyaki. Day 2 covers sushi making, cutting techniques for sushi and decorations for bento boxes. Day 3 covers age-mono (deep fried food) such as tonkatsu (deep fried pork) and kushi-age (skewered food). From learning Japanese bento cuisine you can create your own special bento box meal at your next special event!
