Our Origin
Our story began when Canadian visitors from Northern Alberta Institute of Technology toured Cravings, the restaurant and bakeshop of the mother-daughter duo, Annie Guerrero and Badjie Trinidad.
One visitor asked, “Where do Filipinos learn how to cook?”
Both Annie and Badjie shared that Filipinos learned how to cook in their home kitchens.
That moment was the spark to the flame of CCA Manila’s 20 plus years in culinary education.
Our founders set on the path of building an effective curriculum with the help of Dr. John Knapp, project coordinator of The Northern Alberta Institute of Technology and The College of Home Economics of the University of the Philippines.
It took three years, but CCA Manila opened its kitchens in November 1996.
Today, we are home to thousands of Filipino chefs, culinarians and entrepreneurs who have trusted us with their culinary dreams.
We are proud of our community. And, we continue to flame on till this day.
MILESTONES
Student Visitation Program
Student Visitation Program (Collaborative International Training & Education) with Northern Alberta Institute of Technology established in 2009. The students in the above photo are our recent batch of students that took part in this longstanding program.
Partnership with William Angliss Institute
Partnership with William Angliss Institute, Melbourne for collaborative education – Started in 2010 – We had collaborations on the delivery of Events Management program, 2+2 program on BS Culinary Management at WAI, The Coffee Academy, Filipino Barbie at Melbourne.
Partnership with Korean Agro-Fisheries
The Career Development and Placement Assistance Program of CCA was installed in January 2012. This program refers to the formalized policies on international student internships and training
Partnership with Korean Agro-Fisheries Food Corporation and Korean Food Promotion Institute for Special Education on Korean Cuisine established in 2012.
Green Chefmanship Program
We are the first and only school with this program.
Expansion of CCA Manila
Expansion of CCA Manila Main Campus – CCA Information Resource Center (AK, iLib, Library) and the 4 storey building along Katipunan (The Coffee Academy, Grand Kitchen, Events Hall,etc)
2014 – ISO 14001 Certification.
Partnership with ICDE
Partnership with ICDE for offering the French Culinary Arts Program at CCA in 2016.
