Our mission is to provide excellent culinary education and social, leadership values among CCA’s communities.
Our story began when Canadian visitors from Northern Alberta Institute of Technology toured Cravings, the restaurant and bakeshop of the mother-daughter duo, Annie Guerrero and Badjie Trinidad.
One visitor asked, “Where do Filipinos learn how to cook?”
Both Annie and Badjie shared that Filipinos learned how to cook in their home kitchens.
That moment was the spark to the flame of CCA Manila’s 20 plus years in culinary education.
Our founders set on the path of building an effective curriculum with the help of Dr. John Knapp, project coordinator of The Northern Alberta Institute of Technology and The College of Home Economics of the University of the Philippines.
It took three years, but CCA Manila opened its kitchens in November 1996.
Today, we are home to thousands of Filipino chefs, culinarians and entrepreneurs who have trusted us with their culinary dreams.
We are proud of our community. And, we continue to flame on till this day.
